Total Time 30 minutes

  • 130 g of sifted 00 flour
  • 2 medium eggs
  • 15 g of sugar
  • yeast 1/2 sachet of baking powder
  • 200 g of milk
  • 30 g of melted butter
  • jam to taste maple syrup or Nutella or jam
  • to taste extra virgin olive oil

    1. To make the pancakes, separate the yolks from the whites and whisk the whites until stiff.
    2. Using a hand whisk, combine the egg yolks and sugar in a separate container (or electric whisk).
    3. Mix in the melted butter and milk, a little at a time.
    4. Now, gradually add the yeast followed by the sifted flour.
    5. We continue to mix until we have a lump-free dough. If not, a colander can be used to filter the mixture.
    6. Finally, gradually add the stiffly whipped whites and mix until the mixture is creamy and homogeneous.
    7. Place a drizzle of oil (or a small knob of butter) in a nonstick pan and heat it over medium heat.
    8. Pour a ladle of the mixture into the hot oil, attempting to form a circular shape.
    9. Each pancake is cooked for about 2-3 minutes, then turned with a spatula and cooked until golden brown.
    10. We repeat the process until the batter is depleted.
    11. When finished, our pancakes can be topped with maple syrup, Nutella, or jam.
    12. We then embellished them with berries.
