Ingredients

  • 6-8 slices of bread with cereals
  • 2 courgettes
  • 70 g of speck into strips
  • 2 eggs
  • 1 pinch of grated lemon zest
  • 100 ml of
  • fresh cream
  • 2 tablespoons of grated Parmesan cheese
  • 3 tablespoons of extra virgin olive oil

Instructions

    1. Begin by slicing the bread for the mini quiche with courgettes and speck. Make a disc from each slice with a 12 cm diameter circular pastry cutter. Using a rolling pin, flatten each disc.
    2. Butter a muffin mold and place the bread discs inside to form shells. Allow them to dry for about 3 minutes in a preheated oven at 180 °. Set aside. Grate the zucchini with a large-holed grater and place it in a bowl.
    3. In a nonstick pan heat the oil and saute the courgettes and speck for about 5 minutes stirring occasionally with a spoon. Allow it to cool. In a mixing bowl, combine the eggs, non-whipped liquid cream, lemon zest, and parmesan, and season with salt and pepper.
    4. Turn in the courgette and speck mixture. Fill the bread shells with it and bake at 200° for about 15-20 minutes.
    5. Remove the mini quiche with courgettes and speck from the oven and serve warm or cold.
