Meatballs are one of the most delectable dishes to prepare in the kitchen. They are popular with both children and adults, and they are especially simple and quick to prepare.

  • Ground beef 500 g
  • Stale bread 130 g
  • Parmigiano Reggiano DOP to be grated 50 g
  • Medium eggs 2
  • Salt up to 3 g
  • Black pepper 3 g
  • Smoked provolone 50 g
  • 1 sprig parsley
  • Thyme 2 sprigs
  • Breadcrumbs to taste


    1. Begin slicing the stale bread to make the meatballs. Remove the crust and cut the crumb into cubes then combine it with the chopped parsley and thyme leaves in a mixer and mix until the mixture is sandy and homogeneous. Provolone should be sliced and coarsely chopped.
    2. Place the meat, minced bread, and provolone in a large pan, followed by the grated Parmesan and lightly beaten eggs.
    3. Season with salt and pepper, then knead with your hands until a compact dough forms, which should be refrigerated for 30 minutes covered with cling film.
    4. Remove the block of meat from the refrigerator, wet your hands, and begin dividing the dough into 20 g portions: shape each on the palm of your hand to obtain 44 meatballs of the same size, and then place them on a tray lined with cling film. Place a generous amount of breadcrumbs in a bowl and coat each meatball, turning it with a fork to ensure even breading. Allow them to rest on the tray, slightly separated from one another. Meanwhile, heat the frying oil to a temperature of no more than 170-180 °F (to be measured with a kitchen thermometer).
    5. When the oil is hot enough, dip 2-3 meatballs at a time with a slotted spoon to keep the temperature from dropping too much. Cook for a few minutes (2-3 minutes) until golden brown, then transfer the cooked meatballs to absorbent paper just long enough to remove the excess oil
    6. Meatballs are ready serve immediately.
