The basic crepe recipe, which can be filled with sweet or savory fillings. Crepes can be served as an appetizer first course or dessert. They are simple to prepare and inexpensive. Fill them with whatever you want from cheese to fresh fruit, jam, or cleverly combined leftovers from the kitchen.
This is the basic recipe for sweet or savory crepes just leave out the icing sugar, honey, and pine nuts that we used to garnish the basic preparation.
Keep the crepes warm while preparing them perhaps in the oven at a minimum of between two dishes-placed on a pan with a little boiling water to prevent them from drying out.
You can also make the crepes ahead of time and store them in the refrigerator for a couple of days. To heat them place them in the oven for at least 8-10 minutes. The compound can also be kept in the refrigerator for up to 12 hours
If salty the crepes can be served as an appetizer, and if sweet, they can be a tasty snack or dessert.
- 3 eggs
- 250 g of flour 00
- 500 ml of milk
- 1 pinch of salt
- butter for the pan
- Whisk the eggs with a fork before adding the milk and a pinch of salt. Sift the flour thoroughly and add it to the egg and milk mixture a little at a time whisking to prevent lumps from forming.
- Mix until the batter is smooth and fluid. Refrigerate the bowl for at least 30 minutes after covering it with cling film.
- After the rest time has passed, heat a nonstick pan, carefully grease it with a knob of butter, and remove the excess fat with absorbent paper. Pour a ladle of batter into the pan and tilt and rotate it to distribute it evenly. Cook, stirring occasionally, for a few minutes over medium-low heat. Turn the crepe with a spatula and continue cooking on the other side. It must be golden in color.
- Continue until all of the dough has been used remembering to grease the pan with butter as needed and stacking the crepes one on top of the other to keep them warm. Serve right away.
