Ingredients

  • 1 cup + 1 Tbsp pancake mix
  • 1 ½ cups whole milk, room temperature
  • 4 large eggs, room temperature
  • 2 tsp vanilla extract
  • 3 Tbsp unsalted butter, melted, plus more for coating pan

Instructions

    1. Blend the pancake mix, milk, eggs, vanilla extract, and melted butter until smooth. Allow the mixture to rest for at least 30 minutes if possible. Alternatively, you can prepare the batter the day before and refrigerate it overnight.
    2. Over medium heat, heat a 7- or 8-inch nonstick skillet (or crepe pan). Coat with a small amount of butter. Pour 14 cup batter into pan and gently tilt and swirl until batter coats the bottom evenly. If you're using a 7-inch pan, use slightly less than 14 cups of batter.
    3. Cook for 1 to 12 minutes, or until the crepe is golden on the bottom and the edges are pulling away from the pan. Pull the edges up with your fingers or a spatula and flip when ready. Cook for another minute before transferring the crepe to a plate.
    4. Continue with the remaining batter, sprinkling a little butter into the pan between each.
    5. Crepes can be served with maple syrup, ham, and cheese, or any other filling of your choice.


Notes

  • If you want to make crepes the traditional way, omit the pancake mix and instead use 1 cup all-purpose flour, 1 tablespoon granulated sugar, and 14 teaspoon salt. Keep the rest of the ingredients the same.
