I’m not sure about you but I love carbonara and I finally found the perfect recipe that I’d like to share

I’ve always eaten carbonara in Rome’s restaurants (how wonderful) but while documenting myself I discovered that there are numerous variations for the preparation of this dish Many people remove the pasta from the heat but I don’t because I believe the egg remains raw Others add cream but it is not permitted in my kitchen! Others only use the yolks.

Today I present the PERFECT recipe for creamy carbonara pasta it is very tasty and for a few minutes you will feel as if you are tasting it in a typical restaurant I assure you that once you try it, you will never go back.

Cook Time 15 minutes
Additional Time 5 minutes
Total Time 35 minutes


  • 300 g of spaghetti (organic Martino's pasta)
  • 3 egg yolks (+ 1 whole egg)
  • 150 g of bacon
  • 80 g of pecorino
  • 40 g of Parmesan cheese
  • 1 glass of dry white wine
  • Oil
  • Sale
  • black peppe


    1. Cook the spaghetti while pouring some oil into a pan with the diced bacon and browning it then adding the wine and letting it evaporate, then adding a ladle of pasta cooking water at the end.
    2. Beat the eggs thoroughly with the cheeses and black pepper.
    3. Drain the pasta while it is still al dente and add it to the pan with the bacon, whisking over low heat; pour in the egg and cheese mixture and turn quickly, turning off the heat and continuing to stir until a nice creaminess is obtained. Serve right away.
